4 slices Sugardale Bacon
2 fresh Tilapia filets - or any whitefish of your preference
1 + 1/2 Tbsp. olive oil
Salt & pepper
- Preheat oven to 400°.
- Brush each tilapia filet with 1/2 Tbsp. olive oil and generously season with salt and pepper. Carefully wrap each filet with two strips of bacon ensuring the ends of the bacon are on the bottom of the filet.
- Place remaining 1 Tbsp. olive oil in an oven-safe skillet over medium heat. Once hot, carefully place bacon wrapped filets into the skillet. Allow to cook for about 3-4 minutes until bacon has started to crisp on bottom side. Carefully flip fish filets and continue to cook for 2-3 minutes.
- Transfer the skillet to the pre-heated oven to continue cooking. Bake at 400° for 5-8 minutes until fish is cooked and flakes with a fork and bacon is crisp. Serve with fresh vegetable of your choice.
